Dry beans versus shell beans

This is my first year to grow anything other than green beans. I ordered a few different kinds. Some say good fresh or dry. Some only say good dry. Some say good as snaps or dry. So...

1. Is any "drying" bean ok/good to eat fresh (shelled)? For example I've eaten fresh pinto's before but they are typically thought of as dry.

2. To dry beans for eating later, do you do it the same way as when you collect seed? Letting them dry on the vine? If so, doesn't that cut down on productivity?

3. How do you tell, in general, when a drying or fresh bean is ready to be picked (and shelled) for eating fresh?

If it helps, I'm growing Golden Lima, Hidatsa Red, and Cherokee Trail of Tears - they are all Phaseolus vulgaris.
