Comments (8)Hi Gardenerenthusiast, I am glad you asked this question because the same thing has been happening to me, on both my zucchinis and my spaghetti squashes. Along with rotting blossoms that don't open, I've been getting female blossoms where the squash has shrivelled up before the flower even opens. My plants are otherwise healthy, though I have just started to see some yellowing on the leaves. Unfortunately I have no idea what is causing this, though I've narrowed it down to blossom end rot (which would mean a lack of calcium in the soil) or under watering (it's been very dry here and I've been watering shallowly and regularly, instead of deeply), or some kind of virus/fungus etc. I can't see any trace of pests on my plants, save for a few black aphids, and there are no signs of squash vine borers. One of the strange things is that it suddenly affected my zucchini, spaghetti squashes, and now my delicata squashes all around the same time, even though they are in different garden beds. This makes me think it is either the weather or a virus. My current theory is that I haven't watered them deeply enough, and also that they might need more plant food since they are quite close together and fruiting heavily. Comments (10)I definitely agree with the cornbread casserole. Wyatt's Cafeteria (might have been local chain?) used to serve a yellow squash dressing that was wonderful. I don't have the recipe in front of me, but do a search for Wyatt's Squash Casserole or Wyatt's Squash dressing and the recipe will come up. I've also substituted pepper jack for the cheddar at times, or did a combination. This casserole/dressing also freezes well, both cooked and uncooked, but I prefer to precook it so that it only needs to be reheated as long as it takes to get hot through and through. I buy disposable aluminum casserole pans for my freezer meals. So easy. I make several of these casseroles at one time, so the mess is only once! Comments (22)gardenwebber: I DO freeze shredded zucchini/squash all the time (4 cups in a quart-sized ziploc). I thaw completely. I open just a corner of the bag and partially drain off the "water". Don't squeeze it all out, just what flows out freely and easily. I then use the squash cup for cup in zucchini breads. My recipe does not come out dry. I'm sure it can vary from recipe to recipe and even more so for something besides bread. You can also use the shredded squash in soups, stews, add to meatloaf, make zucchini patties, muffins, etc. Do a google search for shredded zucchini recipes and find lots of ideas. You don't mention your particular level of cooking experience (and there's no need), but if you do have some experience, you should be able to adjust the moisture content as needed (i.e. you understand how thick muffin batter should be and can add liquid or dry ingredients as needed or squeeze out more moisture to make patties).
