One more question about raw-pack meat...

Now that the jars have cooled I see chunks of congealed fat in them. I did trim all the fat from the exterior of the roast before cutting it up, and if I say a vein of interior fat I trimmed that while I was cubing it. This was eye round, USDA Choice, which I thought was pretty lean. Is the fat in the jars (some big chunks, some small particles) a concern? It was PCed at 10 (or over) psi for 75 minutes. Coming up on 24 hours now so need an answer ASAP if I have to open the jars and freeze. Thanks.
