Using Old Jars & 3/4 full jar

My mother just sent over some pint jars for me to use. There were some canning jars, but there were a lot of pint sized jars that came from something else. I am sure my mother used these to can, but I know that she also did her tomatoes in the "kettle canning" style, so I am not going to assume they're good to use. Are these safe to can tomatoes, chunky in their own juice, BWB? I am thinking no and guess I am looking for confirmation.

Also, I had one pint that was just 3/4 full of tomato sauce. I processed it with the rest & it sealed fine. I did not put it in the fridge, but did put it on the "use first" shelf. Is that a problem?

No, per the guidelines they are not considered safe to use. You risk broken jars, weak or no seals, wasted food, and a real mess in the canner.

You never process partially filled jars. Air remains trapped in the jar and allows bacteria growth and oxidation of the food. Fridge storage only and ASAP use.

Have you checked out all the resources provided by NCHFP including the FAQs there? Most all basic questions are covered in detail if needed.

Do you mean Crushed Tomatoes? Or what? Whole or Halved packed in tomato juice or with no added liquid? Raw or hot packed? They have very different processing times. And don't forget the added lemon juice or citric acid.

Should the 3/4 full jar be pitched now? It has been about 2 weeks since I did that one. I am doing crushed tomatoes, no added liquid, hot packed with lemon juice. Printed the recipe and keep it on the counter while working with the 'maters.

I looked for the guideline which you paraphrased and I found none. I did not "use" any information (your email address for example) I got on Gardenweb for commercial purposes, so your statement does not apply. B.) I apologize because I still breached the terms. But not in the way you suggest. Guideline # 7, which I missed the first time I read it, states "You agree not to make postings of a commercial nature". OK, yes I did, technically. In my defense it was a direct response and answer to a question posted; I was not "mass-advertising". Also, I do use gardenweb for my personal purposes, and as I said before I missed that one liner in the Terms of Service the first time around. I live in the real world and have limited income so I so the following with an old jar - the last 150-180 I got were canned in the 1970's and some still had liquid content and others (because of roof leaks) had the lids completely rusted out with dried up contents inside. Made two piles - dried up contents - liquid contents Getting the band off sometimes a real problem when very rusted. Easiest thing was to take a small metal cutter and nick the metal ring and turn it off just sardine can with a needle nose pliar. Hold dug in garden and all liquid contents poured into bottom of hole for soil organisms to break down. These jars were placed in a large tub of warm water with bleach and strong soap. Dried up contents were put into a different tub with warm soapy water for a week or so to let the contents soften. Removal of rust stains on the exterior of bottles done with industrial toilet cleaner intended for removal of rust from toilet interiors. It worked very well. When done, threw away the rubber gloves and covered the jar content hole with 12 inches of soil and a board. In groups, turned on my outside propane burner and cooked all the jars for 30 to 60 minutes. Removed groups of jars and stood upside down to drain and put next batch in. After cool enough to handle, checked all bottles for cracks and rim chips. I had missed a couple during the initial "dirty" inspection and discarded these. Used all the bottles up a week later to can tomato products - BWB and Pressure Can. None broke. Got some neat old jars. Spent a good 8 hours time on cleaning the 150 to 180 jars. I live in a urban area in So. Calif. and canning jars here at pretty rare. There are no basements at "Aunties" house full of jars (there are no basements anywhere). Finding 150 to 180 in one place 35 miles away was a real find. I know Linda Lou would have thrown them all out. That would have been the cautious thing to do. I also should not have replaced the missing shingles on the roof of my house and I should not have picked up the rattle snake in the yard and moved it to the edge of the forest. Don't what you mean by the old Heinz recipe as there are many attributed to them (some fine, some very unsafe) so use care. Keep in mind that a minimum of 50% vinegar brine is required and more vinegar is better. Many of us also recommend using Pickle Crisp as it helps keep the sliced picles more crisp. I also have several of those old blue jars, but they aren't rare, most are just old. There are a few notable exceptions, like the "upside down" jar. If you can find someone to give you money for them, sell them, they are easily replaceable, although the pints are more rare than the quarts and yours do seem to be in very good shape. There's some kind of "swap meet" annually, I think in Indiana, so there are probably more throughout the country. I know there are often specimens for sale on ebay, although "being for sale" and actually being sold are vastly different. I do use mine for storage of things like rice, beans, dehydrated onions and garlic, wheat berries, quinoa. They are easier than keeping half a bag of rice or an opened box of quinoa, I can see the contents and it's easy to pour from them. Plus it looks tidier on the shelf. I don't can with them or freeze them, I use them strictly for dry storage. I have a vast collection of old jars and have no idea what they are worth. I have Atlas and Mom's, Ball and Kerr, Presto and Magic Button. I have an old Corona jar with the glass insert and metal ring. The real worth in those jars is the interest it sparks in my Grandson, he spends hours on the internet (thus staying out of trouble), looking for information on all those jars, LOL. Annie

Yeah that one needs to be tossed. And disposed of with great care, preferably unopened. It has had plenty of time to turn risky. Avoiding this issue is why a specific amount of headspace is given for each recipe.

For many years, people used any jar that could seal. Personally, I've used and still use any jar that the rings will fit correctly. I realize that the jars may not be as strong, so I don't pressure can in them. I'm teaching my grandchildren to use the actual canning jars, but I'm still using some of them. More and more of my 'mayonnaise' jars are disappearing and mayonnaise doesn't come in the right jars any more.
I will eventually not have any 'non' canning jars left, but at this point I'm using them and understanding the caution.

My partial jars go in the frig and that helps to decide what's going to be for dinner the next few days.

I know I'm not 'right' in doing this, so don't give me the riot act.

Nah, wouldn't think of it. The mess one has to clean up when one of them breaks is lesson enough. :-) Been there, done that, got the T-shirt !

Not sure whether this tip is helpful here.

If one has a partially used jar - whether it is a cook-in sauce or a jam or almost anything either commercial or home-made, there is a way to re-seal it without it going off or becoming mouldy.

Place the partially-used jar into the microwave and run for one minute on full power. Whilst doing this, wash the lid, rinse under running water and shake off to dry. Do NOT use a drying cloth as this could add contamination..

The moment the microwaving is done - as soon as the minute is up, hold the jar with a cloth to avoid burning your fingers and screw on the top. If it is the type of top with a safety button, you will hear that ping in, creating a partial vacuum up to about ten minutes later.

By doing this, you are sterilising the top of the product and the air and it can be kept, not in a fridge, but in a cupboard and can be forgotten about until you next want to use it six months or a year later - it works and is safe every time. I've never had a recurrence of mould since using this technique.
