Veggie garden....starting over in Tampa FL

Well, I have begun to seed & plant my fall garden. This is only my 2nd season- last spring/summer was challenging- but it sounds like it was for everyone here in the heat- so I'm not giving up yet. I want to do this as organically as possible- but also would like to have something to eat before the caterpillars & other critters get to it first. What advice can anyone give me for preventing problems before they arise & it's just too late. Also, what kind of mulch?? Last spring used cypress mulch which was nearly impossible to get out at the end. I've started with recycled brown paper covering- but not sure how long that will last. So.... pine needles?? hay??? what suggestions do you have???? Hope to have a little more success this fall! Thank you in advance ! :)
