questioning a recipe I found online for blueberry butter

How do I know if there is enough acid for this to keep without being refrigerated?

8 cups of pureed blueberries

2 cups sugar

1 lemon, zested

2 teaspoons cinnamon

1/2 teaspoon grated nutmeg

it cooked in the crockpot on low for 6 hr, I then water bath processed for 12 min... all my jars sealed, but am concerned that there's no acid and not much sugar in the recipe?
