Canning Bread and Butter Pickles

I'm trying my first attempt at canning! My father in law has given me his recipes, and I'm reading all about canning online.

He has made Bread and Butter Pickles for years, but he doesn't process them in a hot water bath for 10 mins. Everything I've read online says that is so important for a good seal. His recipe calls for cutting cukes, adding them to ice/salt for 3 hours. Then you drain and add cukes to a brine mixture. Cook for 10 minutes, pour in hot jars, and you're done. Don't I need to put in a bath??? Please advise.

Also if anyone has a great sweet banana pepper canning recipe, I'd love it. I'd like to can them whole and eat them like a pickle.
