Reducing sugar in zucchini jam

Below is a recipe posted on GardenWeb that I want to try. However, I want to reduce the sugar in it - any ideas?

Amount Measure Ingredient -- Preparation Method

5 cups grated zucchini

4 cups sugar

1 can crushed pineapple

1/2 cup lemon juice

2 packages apricot Jello

Cook zucchini and sugar until clear. Add pineapple, lemon juice and Jello. Divide into jars. Cool and refrigerate.

Oddly, this doesn't say anything about processing to seal.

I would BWB for 10 minutes if you're not gonna eat it all with a few days. You can substitute any flavor jello. I've used pineapple (great for ham glaze this winter), strawberry, raspberry, and the apricot is very good
