winter squash--can or freeze

There is no good spot in my house for cold storage and I had some squash go bad last year, so I need to process it.

I'd prefer to have it shelf stable and not taking up space in the freezer, but I'm worried that packing the chunks in water will dilute the flavor. (I know I don't like the flavor I get when I cook squash in water rather than roasting it.) Have people found this to be true?

Also, the directions I found for freezing squash call for fully cooking it before freezing. If I don't want it fully cooked how long should I blanch it for?
