Red fleshed apples

Does anyone have any experience with red fleshed apples?


I have access to this tree. I picked this one yesterday. It was still a little under-ripe. Will the color hold up after cooking? Any guess as to how much longer I should leave them on the tree before picking them? If I pick them slightly under-ripe, will they finish up ripening at home? (I'm a teensy bit worried that someone else will pick them.) What would you make with them? I'm thinking applesauce.
