Chaste-tree

For several years I've had a Chaste-tree (Vitex agnus-castus). Even here in the subtropics, where we get no frosts, every winter the leaves fall and the plant is left with bare stems.

I've always chopped it right back to almost nothing, and every spring it just comes back again, as good as new, but never as big as I'd like it to be.

This year, I did some thinking (an historical event?). Is it really necessary to cut it back, or should I just leave it bare-stemmed and let it start regrowing from where it left off?

We don't get a lot of deciduous plants in this part of the world, so dealing with these things is all a bit strange to me.
