Peach Jam and Peach Jalapeno Jam

I have been making this jam for a year now, recipe from the Ball blue book. My problem is that it takes for ever to set up. I had some Peach Jalapeno that never set up. Why?

Has this happened to others?

The unset Peach Jalapeno is great on pork or chicken, so nothing lost there!
