Comments (8)In addition to what's already been mentioned, I would suggest the following: a) When you cut the little oreganon branches, tie them together in small bunches and hung them upside-down to dry. I was told that this way, due to gravity, they keep more of their oils and are more aromatic. b) It's best to harvest during flowering season. I 'm pretty sure the time (eg. morning, afternoon etc) of collection plays a role but I can't remember what I read about it. You may want to look it up on the web. Too much N can strongly affect a plant's ability to manfacture the compounds needed for aroma, flavor, flower and fruit production. Comments (3)Hot & dry lately? The prevailing thought here is that a plant is much stronger tasting when it has been stressed and not so full of extra water. So you can: Try drying the oregano first. That may mellow some of the taste. Young leaves have more mild flavor than the big mature ones. And try a little extra water to the plant. See if that makes a difference too. Comments (6)I most certainly did not miss that the OP was growing in containers. In the 7+ years of answering questions in this group, I've seen two problems account for most every problem people post about here: 1.) trying to grow outdoor plants indoors and 2.) overwatering. Look through the back posts if you doubt me. I know containers are usually watered by hand as opposed to getting rain as the primary source of water so I'm guessing that the OP is watering too much for the herbs to have the taste they should.
