Carrot Cake Jam with canned pears?

Hi all - I know I once said what's the point of canning grocery store produce or already-canned items, but I've got a lot of crushed pineapple to use (opened it to make Hawaiian Chicken). I've also got 2lb of carrots. I figured I'd use up the pint of pineapple and a bag of carrots making carrot cake muffins for Scout Sunday at church tomorrow, just pulled out my recipe and it doesn't use pineapple! Found another one that only uses 1/2C.

So I figured I'd make Carrot Cake Jam while I'm at it - but I don't have any pears! Can I use canned pears in light syrup? This pineapple has been sitting (opened, poured into mason jar) in my fridge all week, the carrots even longer, I'd like to use them up!

Or apples? Applesauce? And no added pectin?

I would use fresh apples instead since it is cooked for a while before canning it. The canned pears will have sugar unless you have them water packed. Still, I would use apples.

Jam has to set, has to gel, whether one uses pectin or not. Canned fruit does not. Sure one can pressure can jam if they wish but it isn't necessary, requires longer time to heat up and cool down and as already mentioned, can have poor results in that it can ruins the set/gel of jam. " My mom always used her PC for everything she canned. She said it was easier that way no tons of steps with boiling this and that and hold this and that in hot water to sterilize." Don't know she made jam that would have required tons of steps. It is just fruit boiled in water and sugar and put in a jar. Please note that the manual you linked recommends BWB processing for jams, not pressure canning. Doing it that way was her choice and yours but processing anything 10 min or longer doesn't require any sterilization of anything. Dave

Here's the sure jell version. SURE.JELL Dutch Apple Pie Jam 4 cups Prepared fruit (about 1 lb. Granny Smith or other tart green apples) 1-1/4 cups Water 1/2 cup Raisins 2 Tbsp. Fresh lemon juice 1 tsp. Ground cinnamon 1/4 tsp. Ground allspice 1 box SURE.JELL Fruit Pectin 1/2 tsp. Butter or margarine (optional) 4 cups Granulated sugar, measured into separate bowl (See tip below.) 1 cup firmly packed light brown sugar Make It BRING boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling. PEEL and core apples; finely chop or grind. Add water and raisins. Measure exactly 4 cups into 6- or 8-quart saucepot. Stir in lemon juice, cinnamon and allspice. STIR pectin into fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. STIR in all sugars quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon LADLE quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.) Notes: I like to use apple juice instead of water. I forgot to put the brown sugar in once and it set fine (I imagine it is all the pectin in the apples). In the future I would probably use the brown sugar and cut back the white sugar by a cup. Better yet get the Ball Complete Book. It has all the recipes found in the BBB and many more. Including the Carrot Cake Jam recipe and yes, it really is 1 1/2 cups peeled and chopped ripe pears regardless of what someone on YouTube said or did and the juice is supposed to be the liquid from the undrained pineapple. Most recipes call for using the liquid pectin and liquid pectin and dry pectin are not interchangeable. So you made several changes in the original recipe. It is supposed to be very thick but it wouldn't look or taste the same as the original with all those changes. It honestly isn't advisable to keep picking recipes to try that are obviously quite sweet to begin with when it's clear that that sweetness doesn't appeal to you. Trying to make all sorts of modifications in them usually only leads to very poor results. So if low-sugar is your primary consideration then why not stick with all the low sugar recipes? Dave

Silvia, those pickled carrots are beautiful. I also plant the multi colored carrots instead of just orange. My favorite color is the Purple Dragon, they are purple outside but orange-ish inside. Last year I planted a mix of orange, purple, white and yellow, but the kids love them fresh from the garden and so I seldom have them anyway except raw, and if my great-nephew, Noah, beats me to the garden, I don't have any, LOL. Jim, Elery uses mirepoix in nearly every soup and sauce he makes, I think. He also adds carrots to chili and tomato based sauces to add some sweetness, so although I seldom cook carrots by themselves, we use them in a lot of things. They are grown here and sold as deer bait for $4 a fifty pound bag, bug those are usually the really big ones. I ought to use those (and cabbage) more often, they're cheap and local and usually very good. The ones from the grocery that come from across the country? Not so good, usually. Who knows how long they've been in storage... Annie

Apples worked great - 2 apples weren't quite 1.5C so I added a handful of raisins. 4.5C of sugar to start, took a little longer than 20 minutes (more like 30-35) to get the apples looking translucent, I was running out of liquid even with the pan covered, so I added a pint of homemade apple pectin and another cup of sugar. Brought it to 220 (actually was trying a little higher, my thermometer is off), but smelled burning sugar so pulled it off the burner and did a saucer test. Looked like a soft set. I'd been simmering the jars since they were cold out of the basement, so I processed for 10 minutes since jars weren't sterilized (would that have been necessary b/c of density with this jam, if I had had sterilized jars?).

Made 4 half pints and almost filled a 12-oz jar that I didn't process since others were boiling by the time I got that one filled. That last one tastes caramelized but not burnt, is very thick and gooey - but good gooey, not like the strawberry-blackberry jam I made with Ball NS pectin. next time I think maybe some apple juice, less apple pectin? Or just less boiling?

So, what do I do with this confection besides eat it by the spoonful right out of the jar (it's that good!)? Oh, I also put a few tsp of ground walnuts into the last 3 jars (stirred into the pot b4 filling). So technically those are a confit, not a jam, but I labeled them "jam" anyway b/c no one else in my family knows what a confit is.

Sounds like it would be good on toast or bagels with cream cheese!!

That's just what I had this morning! DD didn't think it sounded like PBJ material, but she licked the spoon (I broke a plastic one, it set up so stiff!) and thought it was good. So I put a spoonful b/t some graham crackers for her school snack. Now she wants me to make "Carrot Cake Newtons" with it - so I'm going to try LindaLou's cereal bar recipe. Just think I might have to thin it out so it doesn't bake up hard.
