Best pumkins for seeds?

I've never grown pumpkins before, but this year I have enough room for some, so I'll give 'em a try. I don't carve pumkins, or eat pumpkin pie, or pumpkin soup, or pumpkin ice cream, or anything else with pumpkin flesh in it... but I am a flat out pumpkin seed junkie. I want to grow a few pumpkins that have the most and best tasting seeds. Which varieties are best for my needs? I have a full sun growing location BTW.

'Lady Godiva' is a nice one. It's not your typical looking pumpkin. It is yellowish orange with green stripes. The seeds have no hard shell, only a thin cellophane-like covering.

Hello everyone, I am growing Ugu in lahnam, Maryland, USA. it has not seeded yet but I can help you with Ugu seeds if i can get more than one person interested. I do obtain ugu seeds from Nigeria, Pls email me at stopinusa@gmail. I can help you with how to grow it. I did a test run and it took quite a few dying to learn proper way of growing Ugu.
