Eco-Nest or other light clay building?

I'm giving serious thought to building a new house in the next few years. The kids are grown and we won't need this much space. I've been looking at timberframe construction for its beauty and durability, ideally using reclaimed timber. I just don't like the idea of using SIPs for the walls. So not green. I've been looking around for alternatives and have found light clay, a mixture of clay with either straw or wood chip, something like cob. Eco-Nest is one company that does this.

Before I get much deeper into my investigation, I would love to hear from some brave soul who has walked this road before me. Any comments?
