Wrappig my fig tree - failed last year

So this is my 2nd year preparing to winterize my fig tree. It's an outdoor ground planted tree. Last year I used heavy duty plastic. Well of course that trapped the water and the tree rotted. Had no idea because I thought my grandmother used this but her tree is about 10 feet high and 80 years old so maybe it had plenty of air circulating.

Anyway, I have seen tips like a layer of newspaper and a layer of burlap over that. Will that do it? Won't that allow it to get wet and freeze and isn't that what I am trying to prevent? Just want to get it right and there are so very many articles ono the web on how to do it. Any advice is appreciated.
