Brown Turkey (Everbearing) in Wisconsin!!!!!

Hello all,

I live in Madison (south central WI) and bought a Texas Brown Fig at a Chicago farmers market this summer. I planted in in a sunny location at a corner of our house. It has grown well and has a lot of new growth and has already given us two delicious figs and has ten others which will hopefully ripen. The guy at the farmers market claims this tree will over winter outside with the proper care. My questions briefly are as follows:

1) If I choose to leave it outside how do I best "tip it over" to cover it up ? Do I literally dig up the root ball in order to tip it over without breaking the main trunk? Or,do I just bend it over as far as I can and tie it down some how in order to be able to cover it with mulch? In this way at lest the root ball stays protected in the ground. The tree is currently 4' tall and 2.5' wide. The main trunk is approx. 3/4" in diameter.

2) Pruning. How much and when? I've read in my cold climate it's best to try to keep them shorter and more bush like. I've also heard prune oldest branches in spring and leave the youngest. How far back would I want to trim those branches?

Any help will be greatly appreciated. I've posted a few photos for what it's worth.
