Fresh Mint Cake with Dark Chocolate Mint Frosting Use the first herbs of spring in this fresh mint cake with dark chocolate mint frosting for a simple and yet elegant treat. Prep Time, 20 minutes Cook Time, 20 minutes Total Time, 40 minutes Ingredients Fresh Mint Cake 2 Cups Unbleached, All-Purpose Flour 2 teaspoons Baking Powder ½ Cup Chopped Mint (1/2 ounce by weight) ½ Cup Butter, softened ½ Cup Sugar 1 Egg ½ Cup Milk Dark Chocolate Mint Frosting ⅓ Cup Milk ¼ Cup Chopped Mint (1/4 ounce) ½ Cup Butter, softened ¼ Cup Black Cocoa Powder 3 Cups Powdered Sugar Instructions Make the Cake: Preheat oven to 350 degrees. Butter & Flour two 8” round cake pans. Whisk together the flour and baking powder. Set aside. Cream together the butter, mint, and sugar until light and fluffy. Add the egg, and milk, mixing until incorporated. Add the dry ingredients to the wet and combine thoroughly. Divide and spread the batter among the two prepared cake pans. Bake in the preheated oven for 15-20 minutes or until inserted toothpick comes out clean. Cool in pan 10 minutes before removing to cool completely on wire rack before frosting. Make the Frosting: In a small saucepan, combine the milk and mint. Bring just to a simmer (do not boil or scald). Remove from heat and cover the pan. Allow the minute to steep for 20 minutes. Strain the mint from the milk, pressing to squeeze out all the liquid. Let cool completely. Cream the butter slightly. Add the cocoa powder to the butter and mix well. Alternate a bit of the mint infused milk and powdered sugar and keep mixing until everything is incorporated and the frosting takes on the desired consistency. Spread on cooled cake. Good God, you guys!! Wait until you see the rest of the house!! HA HA! Thought about answering you all one by one, but going to cherry pick before ending my lunch break! I'm 40. I owned a house before with my now ex-wife, moved into an apartment and now moving into a house. So, I've got all the control of what color to make things, how to set it up, etc. without really knowing how to do that. I can hold my own with repairs and my dad is a contractor who translates my "You know, we could..." to "This is how you do it," which ultimately turns into "Hold this light while I do it." I'd like something better than not, but, it seems a lot of you are saying that I should get used to the space first and then tackle it. With an entire house to do this to, this makes a lot of sense. I've picked out appliances that'll run about $1400 for a fridge (skinny enough to fit), a stove (gas) and a dishwasher (my first!!). I did think about used to just tide me over in the short term and still might. I've got 2 weeks to decide. Didn't think about the fire hazard thing and moving things over. A pair of 9's for an 18 makes sense and just slide things over. Not sure how the gas line would effect that, but, that's easy enough to fix. A lot of you said things about budget. I'd like to keep it low, only because I've got the whole house to think about and paint was the cheapest option to give it a different look because the cabinets do like jainky. But, they hold dishes and pots and pans, soo.... could be future Paul's problem! @P M That looks really cool! That's a good luck for the pantry! Also, I work in IT for a university, so the school provides the grant. I have to stay five years and that's it. After that, I can do with what I want. It's not that they approve the changes. They had an inspector come thru and he comes up with a to do list of things that have to get done in a year. My list is 23 things long, but, some of those are super easy (reseat the toilet) and others are more complicated (rewire the garage). They don't have a say in what I do day-to-day, but I have to fix what they want fixed before next September. Again, thanks everyone! We’re nearing the end of our build. we started with the architect but if I did it again I might start with the builder and get their recommendation for an architect. I think the standard process may vary geographically. to find a builder, what worked for us was getting a referral from a lender. I would call local lenders who do remodeling and new construction loans. A lender has an interest in a builder who does quality work in a timely manner. our builder was fabulous, found through a lender. i have a friend who found their builder through an architect and their project is the biggest saddest disaster. Their story could be on the news but I won’t say it here as it’s their story. But awful. Our architect recommended a builder who woukdnt call us back and led us on for awhile until we found the builder on our own. after these experiences, which are not that many, i have started to recommend getting referrals through lenders not architects. Although the very good architects on this board are probably exceptions to that and my sample size is small
