What's Living on my Water Hyssop?

I bought a potted Water Hyssop from a local nursery after seeing a cloud of White Peacock Butterflies swarming over the plants. I have plenty of Black Furry cats on the Hyssop but there is something else also living on it. It's black & white striped caterpillar with a red nose and hairless. From my searching the internet, the White Peacock cats stay black and hairy, or am I wrong? And how is it that black cats become white butterflies, and green & yellow cats become black butterflies? Anyone with experience raising the White Peacock with advice?
