I have a woodland garden with plenty of deer and my Korean lilac hasn't been touched. Not to say your deer won't nibble, but.. The wild sumac around me is a favorite so I'm thinking any sumac would be a treat for them. As a matter of fact the mother deer that gave birth in my garden was enjoying the sumac the day before she surprised me with her newborn. My Weigela is at least 7yrs. old and going strong without a nibble. And I actually think if it were to get one or two tastes it would pull through. Also free from deer has been my hydrangea Pinky Winky, although I just planted it last year so it's still new. But it's next to the sumac, and the deer enjoyed the Rudbeckia's near it as well. So... Again, not to say your deer won't think your shrubs aren't tasty but these have been good for me.

I planted one of my phlox paniculata "volunteers" out in my garden to see if the deer would eat it. I planted it between large rosemary, echinops, salvia greggi, spirea and coneflowers. In other words, buried in the middle of a lot of plants that aren't at the top of the deer menu. I was operating on the theory that deer are basically lazy. So far, it has bloomed without a single nibble. That said, if more exposed, it would absolutely be eaten! I was just playing around with my free plant. I know what you mean about wanting large blooms like phlox in the garden. In this photo, the carmine blooms below the coneflowers are spirea 'Neon Flash'. It is a small deciduous shrub that likes full sun. It blooms larger than this in June, I shear off the spent blooms with a hedgetrimmer, then it blooms again in late July/early August. My phlox 'Robert Poore' is just above this group in my garden. To the left of the coneflowers is salvia greggi 'Wild Thing'; behind is a buddleia; right side are agastache 'Blue Fortune', although I like agastache 'Salmon and Pink' better. The yellow blooms just to the right are rocket yellow snapdragons (annuals that overwintered here) coming into a 2nd bloom. This is the grouping on the other side of the phlox. If you look carefully to the right side, you can see my little phlox starting to bloom. That's crape myrtle 'White Chocolate' behind it. I've repeated the rosemary (now pulled and replaced by agastache 'Salmon and Pink'), the salvia, a culinary sage, echinops ritro. There's a large lavender up to the right of the myrtle. There's also a pink muhly behind the myrtle (this is a slope). On the left of the echinops, there's newly planted lavender. Blooms that are gone now from this group are rose campion. By the way, at the top is a 2 acre meadow where deer sleep every night! If you can grow lantana in your zone, 'Ham and Eggs' is a variety that works well in the perennial garden. It is supposed to be only 2 feet high, but mine are now over 4 feet in height and width, having overwintered since 2006. Even in my deer resistant garden, the deer will sample a few things, especially along the paths and newly planted perennials. However, 99.9% of my garden is left alone. When I went out this morning, two fawns were at the upper edge of the garden. The herd sleeps in our meadow a few feet above the edge. My husband said that our greyhound has to weave her way through sleeping deer to do her business at night! The deer don't even bother to get up and run! I updated my blog last Saturday with a lot of this information. I go to great lengths to experiment with deer resistant perennials and shrubs. However, your deer may have different preferences, so there are no guarantees. There's a lot of trial-and-error. I hope this is helpful. You should be o.k. with the evergreen trees you mentioned.Stay away from the Arbs, they love those, & they will eat every kind of holly that is out there.You can have them, but your gonna have to keep them sprayed yearound with some kind of deer spray.

What can I plant that is deer resistant? This list of deer resistant plants was compiled from Gardenweb postings and other sources. As you can see from the follow-up postings at the bottom of the list, RESISTANT is the key word. Deer can be quite the gourmets and yours may still be partial to some of the plants on this list. Deer that are hungry enough will eat everything bare from the ground up into the trees as high as they can reach. Many of the plants on this list are poisonous or medicinal. If a plant smells bad to you when you crush the leaf or stem, it probably smells just as bad to the deer. (P.S. I was all ready to quibble and say that I thought Four-O'clocks were Mirabilis, not Clarkia, when I saw you'd got Mirabilis listed as Four-oclocks under annuals. The joy of common names! Have you ever grown clarkia? I understand they do OK here and are really attractive in part-shade. They also devoured a barberry, and hostas are out of the question. One day last winter we looked out our window and saw a doe eating birdseed out of one of our bird feeders! What's tasty is apparently a regional issue, also, so you might try checking your local (in my case, Maryland Cooperative Extension's Web site) extension service for a list of plants that are "deer candy" or avoided by deer in your area. I've had them nibble on Japanese white spiraea (Spiraea albiflora) and the usual tulip and hosta foliage. They prefer my neighbors grass. She has it professionally taken care of every week. I wish she would stop. Our yards are attached and they wander up this way frequently. Moved from California to Virginia last year, so much to learn! Deer are different in different areas. For example mule deer in CA usually won't touch impatiens, but white tail in VA LOVE it. I spent a lot of money to fence in my back yard. The only sure way. (I hope) Also, they won't eat my iris, but they eat certain daylilies, but not others.
