I wouldn't worry about any of them. Worst case scenario they have a die off and come back strong in spring.

Get a copy of the Sunset Western Gardens book - it explains what survives and what dies in this zone.

Roses - No protection needed.

Arabian Jasmine - This is worth protecting, and needs it.

These may die back, but they usually come back in the spring.
Asparagus ferns -
Lantanas -
Orange Jubilee -
Cape honey suckles -

Oleanders - Seldom freeze here.

If things freeze, don't immediately prune them. Wait until mid March or early April and see which stems are putting out new buds.

Roses bushes are frost tolerant. The blooms aren't, of course, but winter pruning in our climate starts right after Christmas and needs to be finished by Feb 15. Rose pruning and planting clinics will be going throughout most of January at the public gardens and nurseries, plus we'll be at the Home & Garden Show at the Fairgrounds in January.

My dad always pruned the roses before mid-October so the plants could have the cool season to grow and bloom. It worked well.

If it's predicted to freeze - cover them at sunset. Remove it when the sun is about to hit the plants or when the temps are above freezing.

Make sure the cover goes all the way to the ground, and is held off the leaves with something.

I use 2x4s across saw horses to make a support for the frost cloth over a cluster of plants, or a tomato cage to protect a single plant. But this year I have ZERO plants that need protecting. We're redoing the chili growing area, so overwintering them is low priority.
