Tips for first time Onion planter

Hi all --

I planted onion sets for the first time this year in the spring. I planted two sets, one I wanted large and the other for green onions. I spaced the first set 4" apart and the second like 2". Both sets have nice tall 18" + green shoots in the air. My question is ...

1) If I cut the tops off will that stop underground production?

2) Should I be adding more soil through the growing season? I have plenty of compost, should I cover the 1/4" top of the onions I want to grow larger?

3) Do I need to top dress at any point in the growing season? My soil is very rich from home-made compost and these are raised beds?

4) What is a good receipe for green onions?
