How to harvest just one garlic bulb without hurting the others

I have some garlic that I planted couple of years ago that just came back. I believe I wait until the tops start to brown before harvesting it. My question is, how do I pull up just one bulb but leave the others intact? Will I hurt the plant if all the bulbs come up and I replant the others? Will that be all I get for this season? One bulb is all we need for a dish. SHould I pull them all up and store the others? I was hoping to use them as food but also as pest deterrents around my garden. I would be grateful for any help.
