Can shade act as winter chill for Gallicas etc?

My garden is close to the ocean, just south of San Francisco. I know roses like Gallicas need winter chill and are not recommended for my climate BUT my gallicas for the most part are doing very well. I have Officianalis, Assemblage des Beautes, Tuscany Superb, Alain Blanchard, Rosa Mundi and a few mystery Gallicas and plan on getting more.

So here's my theory and I'd welcome your opinions...my garden gets approx 4-5 hours sun in the spring summer but by fall/winter most all is in shade (large Monterey Cypress trees to the south and west) so am wondering if the shade can act as a "winter chill" for the roses, promoting dormancy and allowing the Gallicas to bloom. They do bloom very late, end of June into July and even early August which seems more like the timing for roses in the UK rather than CA.

Would really appreciate your thoughts on this.
