suggestion for japanese maple variety

We are building about a 2-2.5 foot berm in our front yard (irregular shape approximately 16 feet x 28ft). We are planning to put 3 spruce, a waterfall with perhaps a weeping evergreen behind it, several evergreen and deciduous shrubs, boulders, maybe ground cover and two japanese maples (one red and one green). The local nursery has a ton of bloodgood japanese maple but in looking at pics on google it looks to be a pretty upright tree. We were hoping for a japanese maples to have more of that layered branching look and kind of reach laterally into the yard (does that make sense). Searching the web is a little overwhelming...too many varieties. I need some suggestions that would fit the above description AND not be impossible to find. We want to buy somewhat larger established trees so mail order/internet is not really an option. The other option we have considered is kind of a sandwiching down the berm with an upright red japanese maple at the top then further down the hill a layered branching/smaller green japanese maple and lastly at the bottom of the hill another smaller/?dwarf/mounding type of red japanese maple. Honestly, we don't know our species well and are just starting to look into this so any advice would be really appreciated. Thanks, Lyn
