Mouth-watering blank canvas - PHOTOS

If you lived here, what, if anything, would you plant? I'd love to see a single, large specimen tree in the center of that field. I wonder if a sugar maple or beech would like to be that exposed? It's zone 6b in western North Carolina.

Unfortunately the house isn't mine, but a family member's who indulges my tree-planting compulsion. Currently the grass/hay is harvested by a local farmer for livestock feed. In the view from the porch, the property line extends to just short of those spruces at the bottom of the hill. They're on the other side of the road in the front yard of another home, and the bare-branched tree in front of them is the very edge of the white house's property. I think it would be great to block the view of those houses at the bottom, but not the mountains.

Thoughts?
