Ray, Your pictures are great! My DH and I saw the 10 x 12 GH for sale in the HF magazine for the first time today, so I've been reading this thread and others with much enthusiasm. How do you feel about your HFGH now? I was feeling discouraged after reading other posts, but after seeing your detailed pictures and instructions feel that we can tackle this and be quite satisfied. Oh my goodness BorS, that looks so nice! I'm good of mind to go tear out my center bed and put in a pond. I'm NOT kidding!!!....LOL....I'll break the news to my husband tomorrow .........yes, tomorrow. (he keeps asking me if we are *DONE* with the GH) I've been thinking about a pond, and your pic made something go click in my head LOL. I like the conservatory theme too! My entire house is shaded (very shaded) by huge Live oak and Hickory trees, so my GH is "the room" where I can grow all of the plants I always wanted to grow in the house - but couldn't. Your shelves look so nice, and give it a real "plant room" feel. I'd love to see pics again when you are done with the pond. Thanks for posting these. Pat

Annie, the color looks very similar. I had to guess on amounts because the site, which is the same one as the posted link above, doesn't say how much the pork belly weighed. I was using pieces that weighed between 1 1/2 and 2 pounds. As it turned out, the recipe is very forgiving. I was sparing with the spices the first time, prodigal with them the third, but each pancetta was delicious. I never used sodium nitrate/nitrite when I cure tongue or corned beef either, and believe me, they aren't gray. It's a totally unneccessary chemical as far as I'm concerned.
