Kawasaki 20 hp. Thermostat

Just completed a major repair to my JD 345 with the 20 hp water cooled V-Twin. When replacing new water hoses, I tested the thermostat. It is a 180 degree, which means it scheduled to open about that figure. It open about 182 degrees. We all know this lawn tractor doesn't need a heater for warmth, so why in sam hill would this engine need a thermostat? Other then to help keep the intake cooled. I'm thinking about removing the thermostat, and running the engine without one.
