Black Magic Elephant ear plant

for the first time I have two balck magic elephant ear plant in the garden pond and I need to know how to care for them during the winter months. I live in zone 6- to maybe 7. I live about 20 miles south of Nashville TN and last winter we did get down to below 0 several times this past winter. I have a in ground and above ground pond, most of it is above ground around 1,500 gals with a 100 gal stock tank filter that sits on the edge of the pond and filters back into the pond. I kept everthing running all winter with out any freeze up by covering the entire pond and stock tank with two heavy duty canvas type tarps using buggie cords to strap the tarp down around the landscape timbers that construct the pond. Should I sink the elephant ear's in their pots to the bottom of the pond or take the tubbers out of the pots for the winter and store them in a cool dry place in the garage?
