Sweet!! Sweet Potato plants!

This past summer I planted some sweet potato slips I had rooted from a sweet potato from the grocery store.

After I learned that sweet potato was actually a tropical/subtropical perennial veggie that like hot humid climates, I was excited to plant some.

Well, tonight we decided to stick our fingers into the soil around the base of some of those sweet potato vines, we found some massive tubers. We only picked a few as at the moment trying to cure any would be challenging so I though We'd be better off storing some of those tubers in the ground rather than letting them go bad in the kitchen. In any case, we have several weeks worth for the two of us and we only pulled some of the tubers from a few of the vines we checked.

I like it! Now I need to figure out an easy way to create an environment that is between 90 and 95 Degrees F and 80-90% humidity to cure the tubers for longer term storage. Most of the year that is easy here but between now and Feb it is a bit more challenging.
