Storing Apples Axel's method

I want to think axel sc for his posts under storing apples. I finally got time to locate a decent used chest freezer, ordered the refrigerator thermostat from Quality Wine and Ale Supply, and hooked everything up. The "easy to install" on the packing slip that came with the thermostat was right on. I am now in the process of regulating the temperature as there is a 4 degree differential with the thermostat. The testing part is taking some time because as axel said there is no loss of cool air when opening the chest so it takes a long time for the freezer's (I should call it a cold storage device at this point as it is not freezing anymore)compressor to cut on due to a temperature increase.

I now have my apples stored in two refrigerators and they are bagged to keep the humidity as high as possible. As Jellyman said, the defrost cycle wrings moisture out of the cabinet.

Axel, do you bag your apples before storing them in your chest freezer?
