Seed potatoes and staggered plantings

I am looking at planting 175-200 pounds of seed potatoes next year. I did 125-150 this year and I ran out by mid July. I sell new potatoes at Farmers Markets. I have a problem though, I want to stagger out my plantings a little more. Since I am going to plant more, I will plant them out over a longer window. I usually start planting potatoes around St. Patricks Day to early May. This way I always have potatoes in the "new potato" size.

Two questions:

1) What is the best way to store these seed potatoes. They always start to grow really long eyes. Is it ok put them in the fridge to slow them down? I don't have a great cool place to keep them.

2) What is the best way to plant Fall Potatoes? I can never find seed potatoes for fall plantings. Am I setting myself up for disease problems if I replant some of the spring crop for a fall crop?
