Black Beauty Eggplants
Comments (2)I too have a Black Beauty eggplant that I'm growing and it's giving me a hard time but from what I've read it's somewhat typical. I hand pollinate all of the flowers on it (all you have to do is take a q-tip or small paintbrush and gently brush around some of the pollen to the long, skinny stigma in the very center) but it's still dropping flowers like crazy. I know it's getting enough water since I water every day. Mine has produced 2 fruits so far but that's out of about 30-35 flowers. Hang in there!! It really is just a stubborn plant, I think. I have a variety called Ichiban also (you should try that one!) that has done awesome! Every flower I've pollinated has produced fruit!...See Moreblack beauty eggplant
Comments (6)Eggplant are best when unripe. You should pick them while they're still glossy. Once they start to lose the gloss and turn a bit more dull and matte, they're ripe and are going to be a bit seedy and probably a little bitter. Yours is probably ripe and past peak. I find they still work really well in pasta sauces, less good for a straight forward saute. Shape can be variable. That's totally normal....See MoreHow do I pick an eggplant?
Comments (15)kframe, you probably don't want my recipe for Parmigiana di Melanzane (Eggplant Parmesan) because it's a heart attack waiting to happen. lol But if you're craving eggplant, here's an ancient recipe from Gourmet Magazine that takes the fried version to a new level. Slice eggplant (approx. 1/2" thick). Beat an egg with 1/2 tsp. kosher salt. Dredge eggplant slices in cornstarch, tapping against side of bowl to remove excess. Dip in beaten egg to coat. Dredge in seasoned breadcrumbs, pressing so that crumbs will adhere. Dry briefly on paper towels. Heat oil to 375 degrees. Fry battered slices for a couple of minutes on each side, until golden-brown. Drain on paper towels, sprinkling immediately with more kosher salt. sm...See MoreWhat should I plant between my eggplants?
Comments (25)Hmm. I think one's garden and growing conditions should be considered. Northern gardens get more sun than southern gardens in the summer (which is kind of a surprise, since the south is generally considered to be warmer). Eggplant plants don't grow very big in my garden, even for varieties like Aswad, and if I remember right, Black Beauty. I think that's partly due to the more compact soil, the fact that I don't fertilize a lot, and partly the semi-arid climate. I'm sure the growing season length matters, too. I can certainly believe that they would grow bigger in different gardens, though. I've grown Spicy Globe Bush basil in partial shade with good results. It did as well as the plant in full sun. It mostly got western sun. The plant in full sun eventually got shaded out by nearby plants (peppers, okra, Morelle De Balbis, maybe tomatoes a bit and/or weeds), but it was still fine, if you could find it (I could always smell it when I was near, at least); it didn't get squashed (just shaded, although the shade wasn't dark). Spicy Globe Bush is quite a bit different-looking than many basils, though. It might be more shade-tolerant. I'm growing a bunch of new kinds, this year, but our shade trees are coming down; so the vast majority of plants will have a lot of sun....See Morelizbeth_pa
