Roundup over the top of a potato bed?

I probably know the answer to this question, but I'm going to ask it any way.

Background - every year I grow potatoes and I keep them in the ground until I need them, harvesting a couple plants at a time (until winter comes, then I dig them all up). Anyhow, after the potato foliage dies, the weeds come in and take over, so when I harvest, I have to pull up or dig through weeds to get to the spuds.

So I started thinking about getting rid of the weeds using Roundup. My (perhaps misguided) thinking is that the Roundup will kill the weed plants and roots but not effect the potatoes.

Is this a good idea?

Do the weeds (the cover) benefit the potatoes?

Will I end up posioning myself?

Will the potoates taste funky?
