curing cement peat sand hypertufa

This is a first post, so, er .. hello everyone!

It's a rudimentary question; but after snooping around a bunch I haven't been able to satisfy myself. There are a lot of different mixes covered in the forum here. Anyway, my question is about the cure, but I'm very interested for any input.

I finished my second hypertufa item. A trough that is a tufa coated styrofoam box; tufa about 2cm thick. The mix was 2 parts sand, 2 parts peat, and 2 parts cement. After mixing and applying, I put the trough in a large plastic bag for about 5 days. I did an initial misting, and the bag has condensation on the inside.

Will this be adequate?

It's not really 'wet' per se.

How long to cure?

The tufa has set to the point that drumming with fingers on the sides gives a nice hollow sound. Loose pieces in the bottom of the trough though, seem quite crumbly.

So, I suppose what I'm asking is, how wet is wet, and for how long,
