Can I plant an Asian persimmon over vegetable garden? (sunlight)

Hi,

Can I plant an Asian persimmon (Diospyros kaki 'Saijo') directly over my vegetable garden? The plot is 10' long by 6' wide, so the tree would be completely over the garden.

I feel that I can prune the tree well enough so that the branches are well-spaced to allow sunlight to pass through the canopy; I will keep the lowest limb 5' above ground level.

Would think cause a problem for growing vegetables underneath the tree's spread?

Also, as a separate situation: will partial-sunlight perennials grow underneath American persimmons which are left unpruned (within the spread), but pruned to not exceed 15' width and 18' height.
