Can planting onion bunches be delayed?

Next year's garden and a first time onion grower...

I've about decided on getting Burpee's Candy onions to plant next year. But they come in seeds and lots of two bunches, with about 75 onions in each bunch. I don't want to mess with the seeds, but two bunches are 150 plants!

Isn't that too many onions to harvest and store at once? We are likely to eat 150 onions in a year, not in one summer. I know I can pull some of the young ones for green onions, but I'm wondering if I could plant half of them in the spring, and save the rest to plant in the fall, maybe in the refrigerator? Or will they store for months and months if I plant them all at once? Other onions don't last that long in the pantry.
