Pruning 3 year old seedless grapevines

I did a lot of reading about pruning before buying my 3-year old, fruiting size grape vines. I understand the whole concept of pruning, except what to do this first year. Each plant is about 3 feet tall, came with well-established roots, and have about 2 dozen buds on each. They pretty much look like sticks with a couple of branches. I'll be having growth all over the place soon and I need to know what to prune and what to keep this year.

I'll be trying to train them up to a wire about 6 feet above ground. If I just select 1 cane to grow until it reaches the wire and prune everything else, it seems I'll miss out on a lot of fruit this year. On the other hand, letting more than 1 cane grow at this height doesn't seem right, unless I can do it just for this year to get more fruit.

I know I've done a terrible job describing this situation, so here's a picture. Thanks to anyone who can help!
