How do you handle kitchen compost?

Like many people, I collect organic kitchen throw-away material to make compost, like coffee grounds and tea leaves, things that have passed away in the refrigerator, etc. It ends up being about a large coffee-can full every 2-3 days. But it's a pain to have to put it in the garden that often. Yet if you don't, it's a stinky mess, particularly with eggshells.

I've about decided to puree each day's worth of stuff in the blender while it's relatively fresh so it doesn't look so icky in the garden.

My question: how long do you keep compost material before putting it in the garden? Can I store it outside in a 5-gallon bucket and then dump it all, say, once a week. It'll be pretty rank by then.
