Best tasting and easy care apples for western NC, zone 6B

I've spent the last few years being crazy for cherries and now I'm starting on apples. We've got room for two or three trees and I just bought a Grime's Golden. I'm also considering Liberty, Staymared, Enterprise, Jonagold, and Red Fuji. I don't care so much about color or size. I just want a crisp, juicy apple. We'll be eating them fresh plus making some applesauce, pies, and apple butter. I understand that I'll have to spray some but I don't want the wimpiest variety around, either. Some neighboring property owners just planted a bunch of red cedars. Grrrrr. We're in the mountains, so they're "around the hill and down the holler", so to speak, not directly adjacent to us. Any suggestions?
