Anybody grow lamb's quarters as a veg?

Delicious stuff! I've been growing it for years, by the high-tech method of scattering some saved seed where I want it to grow.

I can't figure out its germination, is why I don't grow it in flats. Sometimes it seems to come up right away, other times it takes months. It doesn't seem to have to do with stratification -- some I planted a couple months ago is coming up now, and the weather has been 80s and 90s all along.

Any of you folks have a less hit-or-miss method? I tried googling the latin name plus 'germination', but didn't find anything. I'd grow larger quantities if I could predict it better :).
