Rootstock Preference (Dwarf, semi-dwarf, or standard)

I've read comments about being able to do summer pruning as far as keeping any tree at a particular height regardless of the rootstock. I know some of you guys possess rather large orchards. My question is what general rootstock do you prefer for your trees? Dwarf, semi-dwarf, or standard? Why?

I understand that dwarfs tend to bear fruit earlier but must be permanently staked and require more TLC. Semi-dwarfs may don't have to remain staked after a few years pass and are said to require less attention to detail but tend to fruit later than dwarfs. Standards don't appear to be desirable unless you have no other choice or you want a larger harvest from a single tree, are comfortable with the wait, and don't mind using a ladder to harvest and maintain your tree.
