How to encourage low branching?

Last spring I planted a Stella cherry tree on Colt Root Stock. This spring I intend to plant a Castleton Plum tree on Krymsk 1 rootstock, and a Gerardi dwarf mulberry. I'd like to keep these trees small. For an undetermined amount of time, probably several years, they will be planted in 15 gallon containers. (The cherry tree seemed to do fine last year.) Later, they will be planted in the ground.

How should I manage these trees to encourage low branching?
