Please educate me on spraying fruit trees and the schedule

I inherited a few fruit trees when I bought the house I live in. Now, I am in the process of putting in more bare root trees. I am adding cherries, nectarines and apples. My existing cherry tree has been diagnosed with "black cherry aphid" that caused leaf curling. My existing apple tree used to have weird brown spots on leaves before it defoliated.

I am trying to learn what to spray, when to spray etc to keep my garden healthy and happy. After talking to my local County Extension agency and a competent nurseryperson locally, I now have a bottle of "All Season Spray Oil" from Bonide. All the talk on sulfur, fixed copper etc is new to me. What should be mixed with the spray and in what season? Please educate me as a complete newbie to all this. BTW/ I would like to use organic (OMRI approved) products where possible, though I am not a strictly 100% organic grower.
