espalier apple / do I have to cut it short?

Hello, I have searched and read many, many sites about espalier. I have read posts from this forum. I mail ordered 2 semi dwarf apple trees (Freedom + Liberty) to pollinate each other. They are about 4 ft tall and have 3-5 small branches. I am not sure I will plant regular or espalier. My main worry is the time it takes to wait for results. (I've started over after Hurricane Katrina and don't want to wait forever!) The trees already have a shape amenable to espalier. Can I start it at it's current height, with the branches starting around 3 ft from ground or should I really cut it back at 15-18 inches tall???? I am not going for a large amount of fruit production, just a 3/4 acre yard and wanting to try the technique.
