the year of the spaghetti squash

Hello,

I have ONE spaghetti squash plant which I started from seed in February. It is currently covering about 300sf in the garden and putting out probably 30 squash! One of them was enormous and I cooked it a couple of days ago---seems fine. But I'm wondering how exactly I will know when each one is ready to harvest. Do they just continue to grow like zucchini? From a past year, I thought the color would darken a bit once it reached full size, but the one I cooked really hadn't changed color---I just thought it had stopped growing. But with so many, how will I know when each is done growing?

How long will they last once cut & brought inside? I was expecting to have spaghetti squash to eat into the winter, but with harvesting so early, do I need to start giving them away?
