Using an incubator for chicken eggs

I have one of the foam type incubators. I bought it used from a man that does a lot of hatching. I have had it plugged in almost 24 hours, I have tried to get the temp right but it would seem the best I can do is around 101. It does not have a fan. Is that temp ok? Also I plan to turn them myself. He told me just put them in an egg carton and turn it over ONCE a day. I often read this should be done 3 times a day. What has worked for you? The bottom does have a place to put water for humidity. Thanks for any suggestions.
