Cover crop help

In a week or so I'll be moving into my new home. It has a large fenced in garden that I will eventually plant full of veggies and flowers. But filling it up will be a couple years from now. Until that time, I want to ensure that I keep building the soil and don't lose it to erosion.

That brings me to cover crops. I know I can plant vetch or a legume to build the soil and help with nitrogen. However, since I'll be planting the cover crop in June, it would have plenty of time for the cover crop to develop its own seed. I only want to have the cover crop this year. Then if I don't plant it all next year, I'll plant some more.

So are there any cover crops where I can ensure that I don't have seed prior to next year? Maybe a bi-annual? Or even a harvest-able cover crop? I don't usually have a frost until at least mid-October.

Any recommendations?
