Neglect/drought resistent vegetables?

I have an old family farm that's not been used in ages and I want to take a small portion of it and put up a fence to keep out deer and groundhogs. The problem is, it's not nearby and I can't check on it weekly let alone daily. Are there any crops that I could plant, walk away from, and come back when they are ready to harvest? The area is zone 7, southern Maryland. I wouldn't know how to best describe the soil, but it's not rocky at all. I'm not looking to do anything this year, but just for a future idea.
